Although work experience in a professional kitchen is an absolute must-have, this need not be in a vegan or vegetarian kitchen. Extensive training will be provided, including emphasis on the particular nature of vegan and vegetarian cooking, and catering to people with specific diets

Chef (part-time/full-time)

- A qualification and/or (minimum 1 year) experience working as a chef is an absolute must

- Must hold a valid drivers license and food handling certificate

- Must be passionate about vegetarian and vegan cooking

- Must have very good team working skills

Nepal Donations

For those that have been following our journey you might have seen the Adventures Of Our Tip Jar.  Every 3 months we distribute our tips and 1/3 of the tips collected are distributed to a charity chosen by the team.

Last month we decided to donate the proceeds to SOS Malta in aid of the Nepal reconstruction effort after the recent earthquakes.

We held a fundraiser at the Cafe and added 20% of the sales of the evening into the pot and also collected donations in a 'Help Nepal' Jar.

In total we collected just over 550€ which have been handed over to the SOS Malta team. We'd like to thank Friends of Nepal for supporting and inspiring the collection process, especially Melanie Vella.

And thank you to all who donated generously into our Jar and into our Tip bowl. We love the Pay It Forward movement!

Polly Higgins at The Grassy Hopper

We had a fantastic time welcoming Polly Higgins to Malta, as she travels around the world speaking about Eradicating Ecocide.  We hosted Polly at the Grassy Hopper for a night of learning about Ecocide and Earth Laws. A massive thanks to those who came and participated in the discussion...for those of you that missed it, this is a little bit about Polly and the Eradicating Ecocide Initiative.

Polly is a lawyer who after many years working in London had a moment when she realised that the Earth needed a really good lawyer. She took a year out, (which became a lot more than a year) to really dive into what a law to protect the earth would look like.

You could say that the earth is now Polly's only client ;)

 

 

Polly's journey took her all around the world and into the ins and outs of what a law to protect the earth could look like, and how it could work on a practical level. In 2010 she submitted a proposal to the UN to amend the Rome Statute to include an International Crime of Ecocide.

The Rome statute is one of the most powerful documents in the world, and it is where the current laws against genocide, war crimes and  crimes against humanity are legislated against.

The addition of the law against ecocide would have a dramatic and very much required change in our paradigm. It will create a duty of care for the earth and a prevention of mass environmental destruction that will also be transposed into national regulations.

Currently businesses have a legal duty to put the interests of their shareholders first, making the maximisation of profit the overriding objective. However if serious environmental damage is outlawed, this maximisation of profit would have to be carried out within different perimeters. Banks, investors and shareholders will not expect or allow their companies to conduct criminal affairs to make profit, so Ecocide Law will turn off the tap of funds to activities which destroy the earth. Just as shareholders will not invest in companies making money off genocide or other criminal activities, businesses post ecocide law will be discouraged from harming the environment by the very people who are currently making money off it happening.

It will in turn cause investment to be channeled to cleaner businesses activities. Activities which provide solutions to environmental issues.

The idea of a law preventing Ecocide is right up our street at The Grassy Hopper. We are all about businesses being a force for good, and trying to reduce our environmental impact as much as possible. So having Polly with us for a few days has inspired us further on our mission to be a Conscious Business. In fact we already have a few ideas up our sleeve, so keep your eye out for those!

Polly's latest book Dare To Be Great will also be on offer from The Grassy Hopper Gzira Outlet through heart to heart funding, as of next week.

Catering for the President

The more we cater for events outside our own premises the more fun we are having.  Not only do we get to create specific menus for different settings and events but it also gives us the chance to create new recipes.

For this event we took a finger food buffet menu to the President's Palace for lunch. The menu was varied, from pickled kholrabi salad boats (garnished with mung bean sprouts and crushed almonds)  to mini-veggie burgers and sandwiches.

A 7 item food menu was spiced up with some of our delicious raw brownies and a selection of energy balls. But the best part of all, was that the whole event was catered using sustainably sourced compostable packaging. The serving dishes and plates were recycled bamboo and the cutlery and glasses made from corn starch.

The crew hosting the event were excited to see a vegetarian buffet look so appetizing.  We are always half surprised and half enjoying to see the bewildered yet enticed look on the surrounding faces when we set up our buffets.

Our Compost Hero

We are super grateful to have crossed paths with Colin. When we were operating our kiosk, we had a store in San Gwann and in collaboration with Garbage to Gardens we were sending our compost to Vincent's Eco-Farm in Mgarr.

With the move to the Café and the closure of our store in San Gwann we didn't have a convenient way of getting our compost to the farm.

We agonized over how we could create a practical system to make use of such a precious resources. Kilos of fresh organic vegetable scraps and juice pulp. Then we met Colin.

Colin is super dedicated to the natural lifestyle. He grows his own vegetables, makes his own sour dough, kefir, sprouts and even shampoos. In fact his whole family are an inspiration for natural living. 

Colin (or sometimes his lovely substitute/wife) comes everyday to our Café in Gzira to pick up our organic waste. Sometimes he brings us some of his own grown organic chard or homemade whey protein. A beautiful collaboration based on the mutual aims of reducing our environmental impact and creating natural products.

What is a raw figolla?

Figolli are a traditional Maltese sweet prepared before Easter especially to be eaten on Easter Sunday. For those of you who know all about figolli, welcome to the world of Raw Figolli.

Given that raw figolli are around 3 times the price of normally figolli, we thought it would be fit to give an explanation of exactly how they are made.

As supremely tasty as the traditional figolli are, they unfortunately contain quite a few not so healthy (and also cheap) ingredients.  Namely; wheat flour, eggs, margarine, sugar, and icing sugar. Figolli recipes usually contain more then double the amount of wheat than ground almonds. These together with the eggs considerably bulk up the recipe and keep the cost low.

Over 80% of our raw figolla is made of pure un-roasted ground almonds.  As well as almonds we use walnuts and dates for taste and natural sweetness. These all create the main texture and give the figolla its classic almondy taste. 

Instead of eggs the raw figolla is bound using coconut oil and agave syrup - two rather expensive but high quality ingredients. Coconut oil improves good cholesterol in the blood, aides digestion, supports thyroid function, helps regulate blood sugar and increases your metabolism, energy and endurance. 

Instead of being sweetened by refined white sugar (of which the health consequences are reportedly numerous), our raw figolli are sweetened using dates and agave syrup - a sweetener derived from a cactus which has a lower glycemic-index (GI) than sugar. This gives it a much gentler effect on your blood sugar levels.

Instead of being covered in icing - we give our figolli a homemade coating made from pure cacao powder.

Since the filling of these figolli contains no wheat or eggs and is instead mostly raw nuts the cost is considerably higher - but the authentic richness coming from the nuts also means that you will be satisified by eating much less :)

So no figolli family wars ;)

(There are also a couple of taste boosting ingredients all natural ingredients added to the mix - but thats our little secret)
